Vegan Breakfast Ideas

1) Oatmeal

Oatmeal is one of the best vegan breakfast ideas because it’s packed full of healthy carbohydrates, protein, and fat. Plus, it’s gluten-free!

Oatmeal is also extremely easy to customize, so you can satisfy your family’s unique tastes without preparing multiple breakfasts.

Here are some simple suggestions for making your oatmeal mouth-wateringly delicious:

  • Try different types of oats
  • Toast the oats before cooking
  • Slice fruit into the mix
  • Sprinkle in spices
  • Dice in your favorite veggies
  • Add in crunch with your favorite nuts
  • Stir in nut butter

2) Smoothie

Want a vegan breakfast idea that’s packed with fruits, veggies, healthy fat, and plenty of protein? Whip up your own smoothie!

If you want to get the most out of this breakfast option, check out our kitchen sink smoothie recipe below.

Ingredients

Note: This recipe yields a bit more than 8 cups of smoothie (enough for two active adults). Adjust the recipe to your needs.

  • 4-5 ounces of spinach
  • 4-5 ounces of sliced zucchini
  • 4-5 ounces of sliced carrot
  • 2 cups of beans (we like black or garbanzo)
  • 5 ounces of frozen blueberries
  • 5 ounces of frozen strawberries
  • 2 cups of juice (we use a mixed berry blend)
  • 1.5 cups of water
  • ½ teaspoon each of turmeric, ground ginger, and cinnamon
  • 2 tablespoons each of chia, flax, and hemp seed (No need to add chia and flax if you throw in our Hearty Grains & Seeds Hot Cereal!)
  • 1 or 2 scoops of pea protein powder (optional)

Instructions

  1. Add all ingredients into a blender
  2. Mix until smooth
  3. Pour into quart mason jars (or smaller glasses)
  4. Serve with a straw
  5. Enjoy!

This smoothie is great for eating at home or on the go.

3) Granola Or Muesli

As vegan breakfast ideas, granola and muesli are pretty similar: they’re both a dry cereal you can eat with or without your favorite nut milk (we like almond milk on ours).

Granola is a mix of dried oats, a sweetener (like honey) that serves as a binding agent, and an oil or butter. The final product is clusters or nuggets of crunchy goodness that you can eat anywhere, anytime.

Muesli is a mix of whole grains (including dried oats and cornflakes), nuts, seeds, and fresh or dried fruit. Muesli typically comes in several varieties with different mixes of nuts, seeds, and fruit.

If you like to customize your vegan breakfast ideas to fit your unique tastes, start with a basic granola and add ingredients from there.

That’s not to say that you can’t customize muesli — you certainly can — but it will come with extra ingredients already added that might make it difficult to achieve the taste you’re looking for.

4) Oatmeal Bars

Oatmeal bar is great option for vegan breakfast ideas

Pre-made, ready-to-go oatmeal bars are an ideal vegan breakfast idea that will fill your stomach and give you the nutrition you need to excel no matter what’s on

your schedule. They also make a healthy snack for homeschooling breaks or in-between meetings.

5) Fruit And Nuts

cherries and walnuts

One of the easiest entries on our vegan breakfast ideas list is fruit and nuts.

Forgot to make oatmeal bars the night before and don’t have time to whip up a smoothie before school? Grab your favorite fruit and a handful of nuts for an easy meal that you can eat anywhere.

Our go-to last-minute vegan breakfast is an apple, an orange, and a handful of almonds and walnuts. This gives us plenty of fiber, loads of vitamins, and enough protein and fat to get our day started right.

If our mix of fruit and nuts isn’t right for you, build your own combination for a breakfast of champions the whole family will love.

6) Overnight Oatmeal

Overnight oatmeal is a quick and convenient vegan breakfast idea alternative to cooking oatmeal on the stove.

Instead of boiling the oats in nut milk, water, or broth, soak the oats overnight in the liquid of your choice. As the oats soak, they absorb the liquid and soften enough that you can eat them uncooked.

Overnight oatmeal only needs to soak in the refrigerator for two hours, but the long hours between when you prep it at night and when you eat it in the morning make it all the better!

When breakfast rolls around, add your favorite toppings and ingredients for a vegan breakfast treat that can’t be beat.

7) Vegan Breakfast Skillet

Don’t need to rush out the door? This breakfast skillet is one of our favorite vegan breakfast ideas for those leisurely mornings when you’ve got a bit of time to spare.

Ingredients

Note: Like many of the entries on our vegan breakfast ideas list, this tasty skillet is infinitely customizable. Add your own ingredients to make something your unique family will love.

  • Coconut oil
  • Mushrooms
  • Zucchini
  • Red bell pepper
  • Cilantro
  • Green onion
  • White onion
  • Garlic
  • Chili powder, cumin, and paprika to taste
  • Black beans (or other vegan protein)
  • Avocado
  • Salsa

Instructions

  1. Toss all the veggies (except the avocado and salsa), spices, and beans in a large skillet with a bit of coconut oil and fry until golden brown
  2. Top with sliced avocado and a few spoonfuls of salsa
  3. Dig in and enjoy!
