1) Oatmeal Matcha Cookies

Ingredients

  •  1 1⁄4 cup of oatmeal
  • 2 teaspoons of organic matcha powder
  • 1⁄2 cup of flour
  • 1⁄4 teaspoon of salt
  • 2 tablespoons of coconut oil, melted
  • 1⁄2 cup of pure maple syrup
  • 1 banana, mashed
  • 1⁄4 cup of dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Line a large baking sheet with parchment paper
  3. In a large bowl, mix flour, oatmeal, baking powder, matcha, and salt until combined
  4. In a separate bowl, whisk together mashed banana, coconut oil, almond extract, and maple syrup until well combined
  5. Add the dry ingredients to the wet ingredients and mix
  6. Stir in the dark chocolate chips. Mix gently with a spatula
  7. Let the mixture sit for a few minutes
  8. Scoop cookies onto baking sheet with a spoon, 2-inches apart
  9. Bake 10-13 minutes until the edges of the cookies begin to brown
  10. Remove cookies from the oven and transfer to a wire rack to cool completely
  11. Store in an airtight container

  • 1 cup of oatmeal
  • 1⁄2 cup of pumpkin puree
  • 1⁄2 cup of almond butter, or any nut/seed butter
  • 1⁄3 cup of date syrup, honey, or maple syrup
  • 1⁄4 cup of coconut oil
  • 1 teaspoon of vanilla extract
  • 1 cup of almond flour
  • 1 teaspoon of baking powder
  • 1⁄2 teaspoon of baking soda
  • 1 teaspoon of ground cinnamon
  • 1⁄2 cup of fresh cranberries, chopped
  • 1⁄2 cup of chocolate chunks
  • 1⁄4 cup of sliced almond

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Mix together the pumpkin, almond butter, syrup, and vanilla
  3. In a separate bowl, combine the almond flour, oats, baking powder, baking soda, and cinnamon
  4. Mix the dry ingredients into the wet ingredients and stir until well blended
  5. Scoop dough, form into disks, and place on a lined baking sheet (these cookies don’t spread)
  6. Bake for 15 minutes
  7. Let them cool to avoid over-crumbling

Ingredients

  • 1 cup of oatmeal
  • 1 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1⁄3 cup of granulated sugar
  • 2 tablespoons of light brown sugar
  • 1⁄4 teaspoon of salt
  • 1 large egg
  • 1⁄2 teaspoon of vanilla extract
  • 8 tablespoons of unsalted butter
  • 1⁄2 cup of semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. In a large bowl, mix oatmeal, flour, baking powder, granulated sugar, brown sugar, and salt
  3. Mix together until well incorporated
  4. In the same bowl, add egg, vanilla, and softened butter
  5. Fold the mixture with your hands until all the ingredients start to come together and are not so dry
  6. Add the chocolate chips and mix in until dough is no longer sticking to the sides of the bowl
  7. Coat baking sheets with cooking spray or a teaspoon of melted butter
  8. Scoop out a tablespoon of dough, roll it into a ball, and place it on the baking sheet (about two inches apart)
  9. Bake for 20 minutes or until cookies begin to lightly brown at the bottom and the top and are firm to the touch but still soft

4) Vegan Gingerbread Oatmeal Cream Pie Cookies

Vegan Gingerbread Oatmeal Cream Pie Cookies

Ingredients

Cookies

  • 1 cup Irish Steel Cut Oats
  • 1 ¾ cup of flour
  • 1 ½ teaspoons of baking soda
  • 1 teaspoon of salt
  • 2 teaspoons of cinnamon
  • 1⁄2 teaspoon of nutmeg
  • 1 ½  teaspoons of ginger
  • 1⁄2 teaspoon of allspice
  • 1⁄2 cup of vegan butter (room temperature)
  • 1⁄2 cup of coconut oil (solid but soft)
  • 3⁄4 cup of sugar
  • 3⁄4 cup of brown sugar
  • 1⁄4 cup of molasses
  • 2 flax eggs (or egg substitute)
  • 2 teaspoons of vanilla extract

Frosting

  • 3⁄4 cup of vegan butter
  • 1⁄4 cup of coconut oil (solid but soft)
  • 2 teaspoons of vanilla extract 
  • 2 1⁄2 cups of powdered sugar

Instructions

Flax Egg

  1. In a bowl, mix 2 tablespoons of flax meal and 5 tablespoons of water
  2. Let sit for 5 minutes to thicken

Cookies

  1. In a large mixing bowl mix together flour, Irish Steel Cut Oats, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger
  2. Set aside
  3. In the bowl of an electric stand mixer fitted with the paddle attachment, whip together the vegan butter, coconut oil, sugars, and molasses on medium-high speed until light and fluffy (about 2 minutes)
  4. Slowly add in flax egg or egg substitute with mixer on medium speed
  5. Slowly mix in vanilla
  6. Slowly add the dry ingredients into the wet mixture
  7. Beat on low until just combined for less than a minute; do not overwork the dough
  8. Cover dough with plastic wrap and place the bowl in the refrigerator to chill for one to four hours
  9. When you’re ready to bake, preheat the oven to 350 degrees Fahrenheit
  10. Line two baking sheets with parchment paper
  11. Scoop 2 tablespoons out of dough and roll into a ball
  12. Sprinkle dough balls with sugar and place them on baking sheet
  13. Repeat with all dough, leaving 2 1/2 inches in between cookies (they spread a lot!)
  14. Bake in preheated oven for 9-11 minutes; the edges should be slightly browned, but the center should still be slightly jiggly
  15. Allow cookies to cool 10 minutes on the baking sheet before transferring to a wire cooling rack
  16. Let cool for a couple of hours before spreading the delicious Vegan Buttercream along the bottom side of one cookie and sandwich to the bottom side of another cookie
  17. Store cookies in an airtight container at room temperature

Frosting

  1. In the bowl of an electric stand mixer fitted with paddle attachment, whip vegan butter, vanilla extract, and coconut oil on medium-high speed until light and fluffy (about three minutes)
  2. Gradually add in the powdered sugar and blend on low speed until combined
  3. Once all the sugar has been added, increase the speed to medium-high and whip for two minutes
  4. Refrigerate until the cookies are ready to be iced
