Eggs… One of the most common foods handed out at mobile food pantries. The Food Bank of South Jersey Glassboro Hope Mobile is no exception. The containers of eggs were nestled among all of the other foods… Almost taken for granted that they will be there each month. There are so many ways to eat them and to use them in recipes… So how do you eat your eggs? Scrambled? Sunny side up? Raw in a glass like Rocky? How about using them for baking? 4 Grain Muffins:
2 cups all-purpose flour
1 1/4 cups uncooked The Soulfull Project™ Four Grain Hot Cereal
1 teaspoon ground cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
1 cup packed light brown sugar
2 eggs
1 cup milk or unsweetened almond milk
1 cup golden raisins or dried cranberries

  1. Heat the oven to 350°F. Spray 12 (2 1/2-inch) muffin-pan cups with vegetable cooking spray.
  2. Stir the flour, 1 cup cereal, cinnamon, baking powder and salt in a medium bowl.
  3. Beat the butter and brown sugar in a large bowl with an electric mixer on high speed until the mixture is creamy. Add the eggs and beat until well blended. Stir in half the flour mixture. Stir in the almond milk. Stir in the remaining flour mixture. Stir in the raisins. Spoon the batter into the muffin-pan cups. Sprinkle with the remaining cereal.
  4. Bake for 25 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let the muffins cool in the pans on a wire rack for 10 minutes.
