1) Exotic Flavored Granola Cookies

This recipe is actually three different granola cookies in one. That’s possible because you choose the type of granola you add to the mix.

We recommend one of the following flavors for a cookie that tastes like nothing you’ve ever had before:

Ingredients

  • 4 cups of your favorite Soulfull Project granola flavor
  • 1 3⁄4 cups of flour
  • 1 3⁄4 cups of brown sugar (firmly packed)
  • 1 tablespoon of cinnamon
  • 1⁄4 teaspoon of baking soda
  • 1 cup of butter (softened)
  • 2 eggs
  • 1 teaspoon of vanilla
  • ½ cup of raisins (optional)
  • 1 cup of semi-sweet mini chocolate chips (optional)

Instructions

  1. Preheat oven to 375 degrees Fahrenheit
  2. Line a cookie sheet with parchment paper
  3. In a large bowl, stir together the flour, brown sugar, cinnamon, and baking soda
  4. Stir in butter, eggs, and vanilla
  5. Mix well
  6. Stir in granola, chocolate chips, and raisins (optional)
  7. Scoop one-inch balls onto cookie sheet
  8. Bake for 9-11 minutes
  9. Let cool and enjoy

2) Peanut Butter Granola Cookies

Ingredients

  • 4 tablespoons of unsalted butter (at room temperature)
  • ½ cup of creamy peanut butter
  • ½ cup of light brown sugar
  • 1 large egg
  • 2 tablespoons of nonfat milk (or milk of your choice)
  • 1 ½ teaspoons of pure vanilla extract
  • ½ teaspoon of ground cinnamon
  • ¼ teaspoon of kosher salt
  • ¾ cup of white whole wheat flour
  • 1 cup of your favorite Soulfull Project granola
  • ⅓ cup of mini chocolate chips
  • 1/4 cup of dried cranberries (or other dried fruit such as raisins, golden raisins, chopped dried cherries, chopped dried apricots)
  • ¼ cup of chopped nuts (such as pecans, almonds, or walnuts)

Instructions

  1. Place a rack in the center of your oven and preheat the oven to 350 degrees Fahrenheit
  2. Line a baking sheet with parchment paper or a silicone baking mat
  3. In the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl), add the butter, peanut butter, and brown sugar
  4. Beat on medium-high speed for 2 minutes until mix is light in color and smoothly combined
  5. Scrape down the bowl
  6. Add the egg, milk, and vanilla
  7. Beat to combine
  8. Stop the mixer to scrape down the bowl again as needed
  9. Add the cinnamon and salt
  10. Set the mixer to low speed and slowly add the flour and beat until the dough comes together and all the bits of dry flour disappear
  11. Gently stir in the granola, chocolate chips, cranberries, and nuts
  12. Portion the batter with generous ¼-cup-sized mounds onto the baking sheet, placing each cookie about 2 inches apart
  13. With your fingers, gently flatten each cookie just a bit (they will not spread much during baking)
  14. Bake the granola cookies for 10 to 13 minutes, until lightly browned and dry to the touch at the edges and still slightly soft and the centers (the cookies will look a little underdone in the middle, but don’t over bake or they will dry out)
  15. Let the cookies cool on the baking sheet for 3 minutes, then transfer them to a wire rack to finish cooling completely by sliding the parchment paper straight onto the rack
  16. Store cookies in an airtight container at room temperature for up to one week or freeze them for up to three months

3) Coconut Cranberry Granola Cookies

Ingredients

  • 1 cup of room temperature butter (2 sticks, 8 ounces)
  • ⅔ cup of brown sugar (light or dark)
  • ¼ cup of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1 ½ cups of all-purpose flour
  • 1 teaspoon of baking soda
  • ¼ teaspoon of salt
  • 3 cups of your favorite Soulfull Project granola
  • ⅔ cup of dried cranberries
  • ½ cup of chopped almonds
  • ½ cup of chopped cashews
  • ½ cup of shredded sweetened coconut
  • ½ cup of mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Line a baking sheet with parchment paper or silicone baking liner; set aside
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy (about 1-2 minutes)
  4. Add the eggs and vanilla and mix until the batter is light in color (about 1-2 minutes)
  5. In a separate bowl, whisk together the flour, baking soda, and salt
  6. Add the dry ingredients to the wet ingredients and mix until just combined
  7. Stir in the granola, cranberries, almonds, cashews, coconut, and chocolate chips until combined
  8. Scoop balls of dough (about two tablespoons) onto the prepared baking sheets, spacing them about two inches apart
  9. Press down lightly with your fingers to flatten the granola cookies just a bit
  10. Bake for 10-12 minutes
  11. Remove cookies from the baking sheet and place on a cooling rack
  12. Store in an airtight container

4) Chocolate Chip Granola Cookies

Ingredients

  • 2 cups of packed dark brown sugar
  • 1 cup (2 sticks) of softened salted butter
  • 2 teaspoons of vanilla extract
  • 2 large eggs
  • 1 ½ cups of all-purpose flour
  • 1 teaspoon of kosher salt
  • ½ teaspoon of baking soda
  • 2 cups of old-fashioned rolled oats
  • 1 cup of your favorite Soulfull Project granola
  • ½ cup chocolate chips
  • ½ cup of chopped dried apricots (optional)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Line a cookie sheet with parchment paper
  3. Beat together the brown sugar and butter until fluffy
  4. Beat in the vanilla
  5. Add the eggs one at a time, scraping the bowl down to push the mixture into the middle
  6. Whisk together the flour, salt, and baking soda in a medium bowl
  7. Slowly add it to the wet ingredients, mixing until just combined
  8. Mix in the oats, granola, chocolate chips, and apricots (optional) until just combined
  9. Scoop portions of dough (about 2 tablespoons) onto cookie sheet, spacing them a few inches apart
  10. Bake until dark and chewy (about 12 to 13 minutes)
  11. For crispier granola cookies, cook a minute or two longer
  12. Let the cookies cool slightly on the baking sheet and then transfer them to a wire rack
  13. When cool enough to eat, serve and enjoy
